Ingredients
2 cups fresh raspberries
2 cups chopped rhubarb
1/2 cup maple syrup or honey
1/4 cup apple cider vinegar
1 tablespoon grated fresh ginger
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons chia seeds
Instructions
In a medium saucepan, combine the raspberries, rhubarb, maple syrup (or honey), apple cider vinegar, grated ginger, cinnamon, and salt.
Cook over medium heat, stirring occasionally, until the mixture starts to bubble and the rhubarb breaks down, about 10-15 minutes.
Once the mixture is thickened and the fruit is soft, remove from heat.
Stir in the chia seeds and let the chutney sit for about 10 minutes to allow the chia seeds to absorb some liquid and thicken the chutney further.
